New Year’s resolutions

Like many others, I too am full of new year’s resolutions for 2014.   Some are repeat offenders: “get back to the gym”, and some are so achievable, they just help me feel like I’m moving the yard stick: “drink more water”. This year, my main resolution revolves around preparing more of the food my family consumes rather that buying it already prepared in a box that you freeze. I am also setting the goal that this food be healthy and yummy. How challenging can this be you ask?? Here’s the situation: 

In the positive column – I don’t have that many people to feed – 2 kids and usually a husband if we happen to be lucky enough to be home on the same evening.  Both my husband and I work full-time, so we have a babysitter who picks up our kids from school 2 nights a week so we can put in a few more hours at the office or actually get to the gym!  So – if I can get organized, I can leave something in the fridge for her to warm up.

In the negative or “challenges” column – My cooking skills hover around the “just left home for the first time” mark. My mother was a wonderful cook, so I have no idea how this happened, but there you have it. I get overwhelmed by recipes with more than 5 ingredients and don’t even ask me to try to figure out how to cook two things at once and have them end up ready at the same time. Finally, I have one picky eater(what parent doesn’t?).

So, this blog is going to help me stay on track by “sharing it with the universe”…because then a solution is just supposed to appear – right?
